Small Gas Spit Braai

These are the most popular gas spit braais and is very easy to DIY, ideal for spit braai buffets (i.e. lamb, beef and chicken), it fits in a car and can cater for about 20 people and roast meat in 1 hours.

Gas Rotisserie Basket Spit Braai

These are the most popular gas spits for larger groups and is very easy to DIY, ideal for spit braais buffet (i.e. lamb, beef and chicken) with roast veggies, it fits in a car and can cater for about 80 people and roast meat in 2 to 3 hours.

Whole Lamb Spit Braai

These are the most popular spits for a whole lamb spit and require a spit braai chef to frequently cut-and-drop the outer roast (lamb/meat), you would need a bakkie or trailer and can cater for about 35 people and roast meat in about 4 hours with a gas spit or about 6 hours with charcoal spit

How to Spit Braai, for this example, we going to discuss how to use a gas spit braai and do it yourself (DIY). Meat is cut, portioned and spiced before it goes into the spit, not afterwards in front of the guests - crispier and tastier

  1. Do not attempt a whole lamb spit braai if it is your first time – the outer roast must be cut-and-drop frequently so that the inner-meat can cook. This takes experience and a hand that does not burn easily. My next challenge is that meat must be cooked outside the danger zone, meaning, it must be cooked within three hours between ±10°C and 70°C or you stand a big change to expose your guest to food poisoning
  2. Rather use a gas spit braai with a rotisserie basket, also known as a buffet spit braai and the meat is crispier and tastier. Use portions (i.e. chops) and/or a whole de-boned leg of lamb, ribs, whole sirloin, because about 25% of a whole lamb consist of bones and waste
  3. Spice and oil your meat portions in a Jiffy/plastic with Barbeque spice and olive oil
  4. You cannot cook potatoes in a spit braai. Potatoes must be pre-boiled or completely cooked before you add it to your spit braai. I like to use completely cooked potatoes in the bottom of my spit so that the potatoes can soak in the juices and spices
  5. Add your roast veggies (i.e. pumpkin) to the rotisserie basket in the beginning, at the same time you add the meat. Your veggies should be blanched with oil and spiced
  6. Add your basting to your meat only about 30 minutes prior to serving as it contained sugar that will burn the meat in the spit braai. The best basting sauce for a spit braai remains Jimmy’s, but you may use whatever you want
